Mace is the bright red, delicate covering surrounding the nutmeg seed. Both spices come from the same fruit, but mace requires its own careful separation and drying process.
India produces mace primarily in Kerala and other parts of southern India. Its warm, sweet and slightly peppery aroma makes it popular in spice blends, biryanis, pickles and desserts. Because only a small amount of mace can be obtained from each fruit, high-quality mace can command a premium.
